IslandSlice Rum: A True Taste of the Caribbean – Made in Scotland
IslandSlice Rum was founded by Sylvester Herman, whose love for rum began in childhood on the shores of Saltibus, St. Lucia. Growing up watching his father distil homemade rum, Sylvester developed a deep appreciation for traditional Caribbean rum-making. After a career with the US Military and the British Army, he brought that passion to Scotland in 2013.
Inspired by his roots, Sylvester launched IslandSlice in 2015. The distillery is proudly based in Dalreoch, Dumbarton – affectionately known as ‘Rumbarton’ – and blends St Lucian heritage with the character of the Scottish landscape.
IslandSlice is the only distillery outside of St. Lucia approved to distil rum to St. Lucian standards, certified by the St. Lucian High Commission. Introducing a unique perspective in rum-making, they craft rum from the lens of the Caribbean slaves by using age-old production methods.
The IslandSlice portfolio includes a smooth White Rum, based on a family recipe passed down through four generations, and a rich Single Dark Rum aged in ex-Speyside whisky casks. The Spiced Rum offers a bold infusion of fruit and spice, while the Scotch Bonnet Rum delivers a sweet, fruity heat inspired by Sylvester’s father’s original creation.
New for this year, IslandSlice is set to release its Cask-Matured Single Rum – a golden, 55% ABV rum matured in hand-selected Scotch whisky barrels, and a ready-to-drink IslandSlice Rum Punch, a fruity, tropical blend - the perfect summer drink.
